Can you cook up sumpn' good?
If you were going to make a nice meal for some good friends who don't eat meat or dairy, what would you make? Fish may be ok (I have to find out); eggs are ok, too. Any suggestions?

veggie lasagna. and you can replace the noodles with some breaded eggplant strips. Use lots of spinach, and fresh, homemade tomato sauce. my partner made this for me the other day, and instead of cheese, he used silken tofu. there are lots of other soy cheeses out there which can be browned on the top, and very yummy.
Or you could make a frittata - kind of like a quiche, but no crust ... I like mine best with sweet potatoes and onions inside.

I've never done a vegan lasagna, but that sounds good. If you have time to consult a cookbook, try Vegan With a Vengeance (they have recipes online too). You've got lots of options.

I was also going to suggest a frittata, with a green salad on the side with sliced apple and walnuts, and maybe another side of oven fries.
A vegan meal I like is a ragout of tomatoes, portobello mushrooms, and zucchini (just slice up the mushrooms and zucchini, use a can of stewed tomatoes, throw in some seasoning, and cook on the stovetop or in the oven), served on top of broiled polenta rounds.
For dessert, you could do wine-poached pears.

A bunch of my friends make a really yummy vegetarian chili from *Cook's Illustrated*. The recipe says you can serve it over rice, or with crackers or whatever. It's always a big hit around here.

In a lot of places where there was cream, you can blend silken tofu in. For example, adding silken tofu to a vegetable soup makes it seem creamy, or to a vegetable SAUCE makes it seem like it's very fattening cousin, vodka sauce. You can also do any kind of stuffed pepper. If you mix a lot of random things together it's weird, but if you put it in a pepper, it's classy.
